Basic Information

Sushi is a representative dish of Japan that is famous worldwide. While there are new styles of sushi overseas that use ingredients like avocado, cheese, and fried shrimp, in Japan, there are various types of sushi establishments. These range from high-end sushi restaurants where artisans craft the sushi in front of you, to affordable conveyor belt sushi places, to takeout shops. One can choose based on their budget and preferences.

Price Range

High-end: Sushiya

This is a style where a sushi chef stands at the counter and serves sushi according to the order. Although the price is considerably higher than conveyor belt sushi, you can enjoy authentic Japanese sushi.


Mid-range: Kaiten Sushi (Conveyor Belt Sushi)

This is a unique Japanese style where sushi is placed on plates and brought to you on a rotating conveyor belt. You place orders through a display, and you pay according to the number of plates you’ve eaten. You can enjoy a variety of sushi at a reasonable price.


Low-end: Sushi Bento

This is sushi sold for takeaway at supermarkets and convenience stores. Because it is machine-made, you can enjoy Japanese sushi at a low price.


Types of Sushi

Nigiri Sushi

This is the representative form of sushi where you hold a small amount of vinegared rice in your hand and eat it with a slice of fish on top.


Gunkan Sushi

This is a type of sushi where you wrap vinegared rice with seaweed and put sea urchin or fish roe on top. The name comes from the fact that it looks like a warship.


Maki Sushi (Roll Sushi)

This is a style of sushi where you put vinegared rice on seaweed, place slices of fish, etc., on it, and roll it into a rod shape.


Niku Sushi (Meat Sushi)

Sushi made with ingredients like beef is called Niku Sushi. There are various types, such as raw meat, grilled meat, and hamburg steak. It is mainly served at conveyor belt sushi restaurants.


Temari Sushi

Sushi made with about half the amount of rice as regular sushi is called Temari Sushi. It is offered in sushi bento at supermarkets and the like.
